Thermostat ?
180 or 160 deg ?
This is all that I can find in my 1957 DeSoto Service Manual regarding the thermostat. (page 56)
"For testing the thermostat:
The thermostat starts to open at 159 to 165 degrees, and is fully open by 190 degrees. Place thermostat in a pail of water and heat water until the thermostat starts to open. Check the temperature with a thermometer and continue heating the water until the thermostat is wide open. Again check the thermometer. Replace thermostats that do not open completely, open at too low a temperature, or open at too high of a temperature."

There is some OEM information that we need to
know. Do you have the "Standard" Cooling Unit
or it it "The OEM Enchanced" Cooling Unit.
Either way look into using the factories enchanced
unit since it became "The Standard" in later years.
This means use the higher degree Thermostat with the
14 - 16 pound Radiator Cap in the 1957 vehicle.
For those of us that do not have an Factory Service
Manual ( FSM ) that has information such as this,
to the left of this is "Resource" that you may click on.
